…and here’s what happened. If you know me at all, you’re probably shocked to your core that I cut carbs out of my diet for an entire month. I’m the queen of pasta and garlic bread (there’s an adorably embarrassing story about Olive Garden breadsticks and a very confused waitress from 2014 that my friends still don’t let me live down), but somehow I managed to go an entire month without both. And it’s all because of Tori. In November, my brother and his girlfriend (Tori, I’ve mentioned both of them lots on the blog since they also live in Nashville) announced that they were going to be cutting out…
Easy Peasy Pasta Salad
Carbs are one of my favorite things to eat, and they are also one of the easiest things to prepare in my opinion. But sometimes it’s hard to take spaghetti and parmesan cheese on the go. For those occasions, I have settled for this fast, easy pasta salad recipe. This is one of my favorite recipes to make as meal prep for the week because it takes under 15 minutes on a Sunday afternoon, and it’s super easy to take to work with me and eat between meetings. Let’s get cooking! Prep Time: 15-20 minutes Cook Time: 0 minutes Servings: 6-8 Ingredients 1 box of farfalle pasta 1 carton of grape tomatoes…

When I found this One Pan Ranch Pork Chops recipe on Pinterest, I knew I had to try it out. My mom loved it, it fed us for more than one meal, and it only took about thirty minutes. What’s not to love? Prep Time: 15 Minutes Cook Time: 30 Minutes Servings: 4 Ingredients 4 Pork Chops (You can get…
Vegetarian Stuffed Peppers
This summer, while I had the time, I decided to teach myself some easy recipes for when I am living on my own. These Vegetarian Stuffed Peppers have got to be one of my favorite recipes I have ever tried. They are super easy to make (it only takes about twenty minutes to prepare the peppers before you pop them in the oven) and really versatile (you can stuff the peppers or set aside the mixture and eat it with chips as a snack). Bonus: You don’t need to cook any meat to enjoy this tasty meal! While I’m not a vegetarian (right now), I do try to eat a…
